Bell Pepper Nachos

Makes: 2 -4 people
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients:

  • olive oil
  • 3 large bell peppers
  • 1lb ground turkey
  • 1/2 cup diced onion
  • 2tbsp taco seasoning
  • 2/3 cup of water or sub for beef broth
  • chicken broth
  • 1 can black beans
  • diced jalapeno
  • mexican cheese blend
  • cilantro
  • lime
  • diced avocado

Instructions:

  • Preheat oven to 375 and line a baking sheet with foil
  • Coat a skillet with olive oil and cook ground turkey meat and onion until the meat is no longer pink
  • Add the taco seasoning, along with 2/3 cup of water or broth and stir. Add the black beans and mix until well combined and heated through.
  • Cut each bell pepper into large strips. Place cut bell peppers on the baking sheet with cut side (inside) up. Fill each bell pepper with meat mixture.
  • Top the bell peppers with jalapeno, cilantro, a fresh squeeze of lime juice, diced avocado and cheese.
  • Bake for 10-15 minutes or until cheese is melted and peppers are tender.

Tips/Notes:

  • I like to stuff the bell peppers with my favorite toppings then the meat mixture so the toppings don't fall off!
  • I prefer to make my own taco seasoning, there are several recipes available online!
