Bell Pepper Nachos

Ingredients:
olive oil
3 large bell peppers
1lb ground turkey
1/2 cup diced onion
2tbsp taco seasoning
2/3 cup of water or sub for beef broth
chicken broth
1 can black beans
diced jalapeno
mexican cheese blend
cilantro
lime
diced avocado
Instructions:
Preheat oven to 375 and line a baking sheet with foil
Coat a skillet with olive oil and cook ground turkey meat and onion until the meat is no longer pink
Add the taco seasoning, along with 2/3 cup of water or broth and stir. Add the black beans and mix until well combined and heated through.
Cut each bell pepper into large strips. Place cut bell peppers on the baking sheet with cut side (inside) up. Fill each bell pepper with meat mixture.
Top the bell peppers with jalapeno, cilantro, a fresh squeeze of lime juice, diced avocado and cheese.
Bake for 10-15 minutes or until cheese is melted and peppers are tender.
Tips/Notes:
I like to stuff the bell peppers with my favorite toppings then the meat mixture so the toppings don't fall off!
I prefer to make my own taco seasoning, there are several recipes available online!
