Buffalo Chicken Sweet Potatoes

Total Time 5 hours

Ingredients:

  • 1 pound chicken breasts
  • 1 5oz bottle FranksRed Hot Original Hot Sauce
  • 6 Tbsp melted butter
  • Garlic powder
  • Black Pepper
  • 4 Sweet Potatoes
  • Ranch Dressing
  • Parsley optional

Instructions:

  • Season the chicken breasts with garlic powder and pepper. Place the chicken in the slow cooker
  • Mix a bottle of Frank's hot sauce and melted butter. Pour over the chicken and make sure it is evenly coated.
  • Cook the chicken in the slow cooker for about 4 hours on low or 2 hours on high. (Cooking times will vary depending on the thickness of the chicken breasts).
  • About an hour before the chicken is done, bake the sweet potatoes. Use a fork to pierce the sweet potatoes all over, then place them on a foil-lined baking sheet. Bake for about 45 minutes to 1 hour, depending upon the size of your sweet potatoes, and until they are tender.
  • Once the chicken has finished cooking, use two forks to shred the chicken. Leave the chicken in the buffalo sauce.
  • Split open the sweet potatoes, top with the crockpot buffalo chicken, and a drizzle of ranch dressing. Enjoy!

Tips/Notes:

Optional toppings: Parsley, green onions, sour cream, or cheese.
