
Bell Pepper Nachos
Makes: 2 -4 people
Ingredients:
- olive oil
- 3 large bell peppers
- 1lb ground turkey
- 1/2 cup diced onion
- 2tbsp taco seasoning
- 2/3 cup of water or sub for beef broth
- chicken broth
- 1 can black beans
- diced jalapeno
- mexican cheese blend
- cilantro
- lime
- diced avocado
Instructions:
- Preheat oven to 375 and line a baking sheet with foil
- Coat a skillet with olive oil and cook ground turkey meat and onion until the meat is no longer pink
- Add the taco seasoning, along with 2/3 cup of water or broth and stir. Add the black beans and mix until well combined and heated through.
- Cut each bell pepper into large strips. Place cut bell peppers on the baking sheet with cut side (inside) up. Fill each bell pepper with meat mixture.
- Top the bell peppers with jalapeno, cilantro, a fresh squeeze of lime juice, diced avocado and cheese.
- Bake for 10-15 minutes or until cheese is melted and peppers are tender.
Tips/Notes:
- I like to stuff the bell peppers with my favorite toppings then the meat mixture so the toppings don’t fall off!
- I prefer to make my own taco seasoning, there are several recipes available online!
