
Buffalo Chicken Sweet Potatoes
Makes: 4
Ingredients:
- 1 pound chicken breasts
- 1 5oz bottle FranksRed Hot Original Hot Sauce
- 6 Tbsp melted butter
- Garlic powder
- Black Pepper
- 4 Sweet Potatoes
- Ranch Dressing
- Parsley optional
Instructions:
- Season the chicken breasts with garlic powder and pepper. Place the chicken in the slow cooker
- Mix a bottle of Frank's hot sauce and melted butter. Pour over the chicken and make sure it is evenly coated.
- Cook the chicken in the slow cooker for about 4 hours on low or 2 hours on high. (Cooking times will vary depending on the thickness of the chicken breasts).
- About an hour before the chicken is done, bake the sweet potatoes. Use a fork to pierce the sweet potatoes all over, then place them on a foil-lined baking sheet. Bake for about 45 minutes to 1 hour, depending upon the size of your sweet potatoes, and until they are tender.
- Once the chicken has finished cooking, use two forks to shred the chicken. Leave the chicken in the buffalo sauce.
- Split open the sweet potatoes, top with the crockpot buffalo chicken, and a drizzle of ranch dressing. Enjoy!
Tips/Notes:
Optional toppings: Parsley, green onions, sour cream, or cheese.
